Summer is finally here and that means long afternoons languishing by the pool with an ice cold drink in hand. We’ve given the classic gin and tonic a fresh and simple twist using three different flavour combinations: grapefruit and thyme, cucumber and basil, and strawberry and black pepper.

Gin and tonic with grapefruit and thyme
Pour 1 shot of your favourite gin into a glass. Squeeze in the juice of a quarter of a grapefruit. Add ice, top up with tonic, and garnish with a sprig of thyme and a slice of grapefruit (you can also crush the thyme between your fingers to release the flavour better).
Gin and tonic with basil and cucumber
Pour 1 shot of your favourite gin into a glass. Use a peeler to create cucumber ribbons, and pop these into the glass. Add ice, top up with tonic, and garnish with basil leaves that have been lightly bruised to release the flavour.
Gin and tonic with strawberry and black pepper
Muddle half a strawberry in the bottom of your glass using a pestle. Add ice and 1 shot of your favourite gin. Top up with tonic and finish with cracked black pepper and strawberry slices.
The trick to making a great G&T is to make sure the fruit and herbs don’t overwhelm the rest of the drink, so try to keep the flavours subtle. Enjoy experimenting!
